there is no specific tapa dish. tapas are little dishes of anything u like to serve with a bottle of wine and a loaf of bread to spend a hour or more over in the evening before the official (very late) dinner. it can be a few pieces of octopus or some asparagus or beans or roasted peppers or artichokes or fresh sardines or anchovies or anything else really. and u can add things that people in spain traditionally did not have. the main thing is that there be many different ones, that they be small portions, and that they taste good.
