History of a Spanish tapa...?

For a project I have to do for a Spanish class at my high school, I need to find, prepare, serve, and tell a brief history of a tapa from Spain. I have the first three things, but I just can't seem to find the history on the recipe I chose. I've tried google but to no avail. It is known as gildas and involves anchovies, olives, chili peppers.

Anywho, here is a link ( http://www.tapas-recipes.com/gildas.html ) so if anyone has the slightest idea of any history for this concoction, it would be greatly appreciated.

Thanks!History of a Spanish tapa...?
The origin of the word Tapa is obscure but, describes a set of small dishes; a way of eating; and a way of life, all arising from the Spanish habit of eating the evening meal very late, and a predisposition towards eating and while drinking. Whole streets in Spanish cities are dedicated to tapeando, or tapasing, which is to stroll with friends and family from bar to bar, nibbling at little plates of delicacies while drinking chilled sherry, or small glasses of beer. The object of the tapas is to whet the appetite.

Examples

Olives, pieces of chorizo, salads, egg croquettes, calamari rings are just a few.History of a Spanish tapa...?
The story I always heard was that the drinks were very sweet and flies kept getting into them so they started serving the drinks with little plates on top to keep the flies out. Then since they already had a plate they started putting little snacks on the plates.

Tapa means cover in Spanish. The word for bottle opener is distapador.

For your search translate the words into Spanish and then do your search in Spanish. You will get a recipe in Spanish at least that way.
