We went to our local Tapas bar & had a gorgeous spinach in cream dish. Does anyone have a recipe for it?

Any help would be great cos I'm hoping to make it for a dinner party that I'm holding tonight.We went to our local Tapas bar %26amp; had a gorgeous spinach in cream dish. Does anyone have a recipe for it?
stir fry some garlic in olive oil

maybe with half a chopped onion til the onion is cooked thro and slightly crisp

add chopped spinach and allow to just cook (overcooking will wilt it)

season with salt and pepper

add a tub of double cream and allow to heat thro

if too thin add a tablespoon of flour mixed in water

voila!

you could always give the tapas bar a ring, they might be kind enough to let you have the recipes, then you'll get it spot on.

Change to: servings US Metric

1 (16 ounce) bag frozen spinach

1 (8 ounce) package cream cheese

2 cups shredded monterey jack cheese

1 cup chopped green onions

2 garlic cloves, finely chopped

10 white corn tortillas (you may need more or less depending on how much filling you put into each enchilada)

1 (10 1/2 ounce) can green enchilada sauce

1 1/2 cups sour cream

1 cup shredded monterey jack pepper cheese





Mix spinach, garlic, green onions, cream cheese, and monterey jack cheese in large bowl.

Place approximately 3 tbsp of spinach mixture into the center of each tortilla and roll them up.

Place filled tortillas side by side seam side down in casserole dish.

Bake at 350 degrees for approximately 30 minutes.

Meanwhile mix enchilada sauce and sour cream in small saucepan simmer over low to medium heat stirring frequently.

Cover with Shredded Pepper Jack cheese and return to oven until cheese is melted and bubbly.

Cook spinach in salted boiling water .

Drain and place in food processor.

Add 250 ml single cream, 1 clove crushed garlic, pepper and salt. Blitz untill spinach is chopped. Place back in pot and stir through to heat.
