Tapas recipes for college Contest?

Hey everyone,



My university is having a cooking contest that isn't going to be too big but I really want to win and blow the judges away by doing something fancy looking. I thought tapas would be good to do because it's trendy and good food all around.



So does anybody have suggestions for Tapas that I can make in an hour?

Tapas typify the relaxed Spanish way of life; here are a few examples:

Roast salted almonds, blanched coated with olive oil, roast at 350F, 20 minutes.



Split anchovy fillets %26amp; wrap around 2 stuffed olives, pierce with toothpick.



Heat olive oil, add eggplant slices, cook both sides until browned.

Remove set aside %26amp; cool. Saute onions %26amp; garlic until soft.

Remove set aside %26amp; cool. Transfer to food processor %26amp; puree.

Season to taste, chill before serving, sprinkle with paprika.



Remove casing from Chorizo sausage, cut into 1/2" dices.

Thinly roll out ready-made puff pastry on floured counter.

Use 3-1/4" cookie cutter, cut out circles, roll out trimmings, re-cut.

Put 1 tsp of chorizo onto each circle of pastry.

Dampen edges with water, fold in half, seal edges with fingers.

Press edges with fork tines to decorate, slit with sharp knife.

Place on dampened cooking sheet, brush with egg glaze.

Bake @ 400F for 10-15 minutes, until golden %26amp; puffed.

Dust with paprika, serve hot.
a lot of tapas are simple things that can be put on a tooth pick and eaten while standing up, drinking and chatting away in a bar. They also can be a simple platter of nuts, cheese, bread, olives, etc.



I've also seen paella served at tapas bars, but that would be hard in an I think, but would be damn good.



Sangria is always good too.
