Looking for a recipe for bacon-wrapped dates? Had them at a Tapas restaurant.?

Looking for a recipe for bacon-wrapped dates, and they are usually served in a creamy orange colored sauce.



I have had these at a Spanish Tapas Restaurant, and someone brought them to a party I was at this weekend and they are SO GOOD!

Here is one of the recipes I use the most.



Bacon wrapped Dates

You failed to notate if you wanted the dates stuffed. This recipe can also be made with prunes stuffed or unstuffed, omit the Saffron cream sauce if using prunes, also prunes can be stuffed with peanut butter and wrapped in bacon.



12 strips of good quality bacon.

24 dates pitted

2 oz feta cheese

4 oz almonds blanched and toasted.



Preheat oven to 500掳 F.



Roughly chop almonds and mix with goat cheese. Stuff dates with goat cheese mixture and wrap dates with bacon and secure with tooth picks



Place dates on a baking sheet seam side down, at least 陆 inch apart. Broil these for 10 minutes but please be careful to watch them as not all broilers are the same. You want nice crispy bacon. if no broiler use frying pan.

When done, place them one layer deep on a nice serving platter.

Chop your fresh tomato finely. Garnish the dish in the middle with the chopped tomato. It gives color and adds a nice taste to compliment the richness of the ingredients.



Garnish with freshly grated parmesan cheese curls and freshly cracked black pepper to taste.



Saffron Cream Sauce

鈥?1/2 cup of finely minced shallots

鈥?1/2 cup of dry white wine

鈥?1 pinch of saffron threads

鈥?1/2 cup of heavy cream

鈥?1 stick of cold butter, cut into pieces

鈥?2 teaspoons of fresh lemon juice

鈥? Salt and pepper to taste



Cut the butter into about 8 pieces. Then put it back in the refrigerator until you are ready to use it. One trick with this sauce is that the butter has to be really cold when you add it to the pan.

Saute the shallots with a little butter in a small heavy pan add the wine and bring to a boil, add Saffron to this mixture and lower the heat to medium when the sauce picks up the color of the saffron.

Add the cream when the mixture has reduced by half. Now, whisk in the butter. Add the next piece before the last one has completely melted.....Stirring constantly! Don鈥檛 allow the mixture to come to a boil. Add 2 teaspoons of fresh lemon juice. Add salt and pepper to taste.



The shallots add a lot of texture to this sauce. If you wanted a really smooth sauce, you could strain the sauce and discard the cooked shallots.

My MIL just just does the bacon around dates and bekes them. I don't remember any sauce but you could reduce some orange juice and brown sugar.
