How do I make a Honda 350 Rancher street legal in NC? Or is there another street legal vehicle I can buy?

I got a Honda Rancher. A big old 350 and I was wanting to know how to make it street legal. Or if there is an alternative. One thing I'm really interested in is Mini Choppers. There's 2 problems though. One is I'm 6 foot 3 inches, 240 pounds, and still growing. The other is that I don't want to drive something with a plastic frame, just because how it looks. 2 and 3 wheelers are "motorcycles" and do not require seatbelts, windshields or 5mph crash bumpers, or emissions testing., where a 4 wheeler DOES
